It is no secret that I LOVE to cook. I grew up cooking for my family, which sparked an uncontrollable infatuation of making others happy through the sense of taste.
In my old age (lol), the desire to live a healthier lifestyle and the development of certain allergies has caused us to take a different approach to good food. During the week, my husband and I work hard to eat cleaner, lighter, better (though we eat whatever our hearts desire on the weekends). So, I saw an image on social media that encouraged this week's dinner.
There are no words to describe this Lobster Cobb Salad and the homemade Citrus Mango Basil Vinaigrette. All of the ingredients marry together creating flavor ecstasy. One thing you'll notice is how colorful this meal is. In my opinion, colorful food is indicative of flavor. The more color, the greater the flavor.
I had no idea what type of dressing to make for this salad, but I knew it needed to be as colorful and robust in flavor as the salad itself. I've made my own dressings and marinades for the last 5 years or so; so I had a little knowledge on how, but I took a total stab in the dark with the "what". My husband, Melvin, admitted that he was initially nervous to try the dressing, as he's a very simple guy when it comes to his food. But, that quickly changed. He has repeatedly voiced, "Babe, that's a winner for sure".
So, I encourage you to download and enjoy!! In this recipe you will find, ingredient list, portions/measurements, and directions. You'll see that the recipe yields quite a bit. I usually cook once a week for convenience. So, "bulk" works best for our household. But, dressing can be frozen or kept in the refrigerator for 2 weeks.
